This spring, head chef Kerth Gumbs infuses the classic roast with a taste of the tropics, starting with a mini colada on arrival, followed by standout dishes including sweet potato milk bread with curried haddock, Old Spot pork belly with burnt apple purée and chilli and pineapple jam, or jerk-seasoned chicken supreme. For dessert, enjoy a light yet indulgent coconut tart, inspired by the creations of Caribbean baker Mr Andre Hall. On bank holidays, live entertainment adds an extra layer of celebration to this sky-high feast.
