Easter is finally here! For many of us, the holiday is the perfect opportunity to sit back, relax – and of course enjoy an endless supply of chocolate eggs. Spring is also in the air, bringing with it better weather, greener gardens, longer days and the promise of summer.
It’s also the perfect chance to kick back with a cocktail or two – so why not indulge this weekend? From rich coffee and chocolate liqueurs to tantalising sips of vodka, which cocktails should you add to your Easter weekend treats?
We spoke to Tim-Martin Harvey, Head of E-Commerce and cocktail expert at The Bottle Club to find the best recommendations.

Baileys Spring Shakedown Easter Recipe
There’s nothing better than diving into a pile of Easter eggs during the holidays, especially for those who gave up chocolate for Lent!
If you’re looking to really unwind during the long weekend, why not take your Easter egg game to the next level – and fill it with Baileys and ice cream? It’s sure to be an absolute smash hit.
To create your Baileys and ice cream Easter egg, start by selecting a hollow chocolate egg. You can purchase one or make your own by melting chocolate and pouring it into an egg mould.

100ml Baileys Original Irish Cream
2x hollow Easter eggs (around 100g each)
6 scoops vanilla ice cream (360ml)
100ml double cream (whipped)

Extra toppings – mini eggs, mint leaves, raspberries or a macaroon
Method
Carefully crack off the tips of the Easter eggs. Consume any stray chocolate shards – no one’s looking.
Blend the Baileys with the ice cream. Then pour it into the chocolate eggs.
Top with whipped cream, chocolate sauce, chopped nuts, mini eggs and chocolate sprinkles. There you have it – a simply eggcellent springtime treat!

If you gave up chocolate for Lent and can’t wait to sate that sweet tooth – this could be the one for you. This cocktail is appropriately named ‘Death By Chocolate’ because it is heavy on the chocolate and guaranteed to kill your sweet tooth craving.
What a way to go.
One blender makes a pretty tall drink for one person, so you might want to grab a fellow chocoholic to share it with.
For a frozen vodka cocktail, it does not get much more indulgent than this recipe. The layers of chocolate begin with ice cream, followed by silky chocolate syrup and complimented by a divine coffee liqueur. We recommend Kahlua or something similar to give it that smooth coffee taste.

250g crushed ice

In a blender, pour the vodka, coffee and chocolate liqueurs, then add the ice cream, chocolate syrup, and crushed ice.
Blend until smooth.
Swirl syrup around a glass before pouring the blended mixture in to serve.
Baileys Affogato Recipe

Cocktails are a wonderful treat in and of themselves, but incorporating them into a dessert just takes things to the next level – and this Baileys Affogato is almost in a league of its own.
Affogato is a classic Italian dessert consisting of gelato and espresso, a simple yet impressive flavour combo that is sure to wow guests. Using just three ingredients, this can be enjoyed as an afternoon treat, or as a winning closer to a lovely evening meal surrounded by family and friends.
Another reason to love this simple recipe is that it’s easily customisable. You could switch the ice cream flavour for something richer, like dark chocolate. Or, you could opt for one of Bailey’s quirky flavours like Eton Mess or Apple Pie.

If you’re after a kick of energy to offset that wonderful Easter dinner or the number of chocolate eggs you may or may not have consumed this weekend – this is the cocktail for you.
This iconic cocktail, along with other flavoured martinis, was at peak popularity in the 90s, but it remains a staple order at many cocktail bars. Smooth, sweet, rich and providing a nice caffeine kick to proceedings, it’s the perfect addition to enjoy as a post-meal digestifs, or as a mid-evening pick-me-up.

100ml vodka
50ml freshly brewed espresso coffee
50ml coffee liqueur
4 coffee beans (optional)
1 tbsp sugar syrup

Pour sugar syrup into a cocktail shaker along with ice, vodka, espresso and coffee liqueur. Shake until the outside of the cocktail shaker feels icy cold.
Strain into the chilled glasses. Garnish each one with coffee beans and enjoy.
Spring Fever Cocktail

Easter isn’t just about enjoying endless piles of chocolate. Well it is, but there’s also the fact that Spring is finally here.
If you’re after a refreshing drink this weekend, nothing captures the fresh, floral energy of spring quite like this aptly-named cocktail. There’s something special about a glass of chilled, sparkling rosé, especially on a warm day.
The Spring Fever comes from Jamie Steinberg, the general manager of Motel Morris in New York City. Steinberg adds floral syrup, fresh fruit and bitters to a glass of rosé to craft a deliciously refreshing treat.
While Sassetti vino spumante rosé is recommended, any quality pink bubbles will fit the bill and make this flower-forward, sweet, tart and festive cocktail. Aside from the rosé, the use of elderflower syrup is a key ingredient to help give it a romantic tinge—the kind of drink you can imagine tasting in the garden of a queen.

21ml elderflower syrup

Strain into a wine glass over fresh ice.
